Recipe: Cucumber Salad (great for pairing with chicken sate!)

Well, if you were looking to make a salad for dinner, you've come to the wrong place! This little recipe is purely for pairing alongside the Chicken Sate w/ Peanut Sauce. 

It's not particularly something the kiddos would enjoy, but I think it pairs perfectly with the chicken sate and wouldn't make any other side dish!

It's quick, easy, and a nice healthy pairing :)

Of course I made another substitution on this, it asks for rice vinegar but I've never used it and didn't want to run out and buy a whole bottle, so I used apple cider vinegar that I had on hand and it worked well, it made it just a touch sweeter...and hey, who doesn't like a little more sweetness? :)

Cucumber Salad (great for pairing with chicken sate!)

  • 1 medium cucumber
  •  ½ small red onion
  • 1 medium carrot
  • 1 tbs rice vinegar
  • 2 tbs sugar
  • 2 tbs hot water


  •       Mix vinegar, hot water, and sugar in a bowl until dissolved.
  •     Dice up cucumber, onion and carrots (or shred) and arrange in layers. Add as much or as little of each ingredient as you like. Pour liquid over the vegetables and chill in the fridge until ready to serve.
