Chicken Spinach Alfredo Lasagna


3 cups of Parmesan cheese, 3 cups of mozzarella cheese, 1/2 cup of butter, 2 cups of cream...you know you want it! 

I just wish I had a better picture to really showcase the deliciousness of this meal, but I was so excited to dig into it I forgot to do a proper photoshoot! 

Just trust me on this one that it is a meal you HAVE to make. As long as you are ok with ingesting oodles of cheese, cream, and butter, then this is a meal for you.

When my husband bit into it do a taste test, he immediately nodded his head and said "mmm yup, this is good." Or something to that effect, I was still giddy from the cheesy goodness :) 




Ingredients:
  • 9 cooked lasagna noodles
  • 1 pkg cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 cups chopped fresh spinach
  • 2 cups shredded chicken
  • 3 cups grated mozzarella, divided
  • ¼ cup olive oil
  • 1 pkg sliced mushrooms
  • 2 garlic cloves minced


Alfredo Sauce:
  • ½ cup butter
  • 2 cups heavy cream or ½ and ½
  • 2 cups grated Parmesan cheese
  • ½ tsp garlic salt


Directions:
  • In a 9x13 baking pan, lay out 3 lasagna noodles. In a large mixing bowl add cream cheese, Parmesan cheese, garlic powder, and mix well. Stir in chopped spinach. Divide mixture into thirds and spread evenly over noodles. Divide chicken into thirds and sprinkle over the noodles. Divide mozzarella into thirds and sprinkle evenly over noodles.  Repeat with 2 more layers. Preheat oven to 350 degrees.
  • In a skillet, heat oil over medium heat and add mushrooms and garlic. Sauté until tender, set aside.
  • In a medium saucepan melt the butter, then add cream, and garlic salt. Stir until hot. Remove from heat and add Parmesan cheese and stir until smooth.
  • Pour Alfredo sauce over the noodles. Top with mushrooms and remaining mozzarella. Bake at 350 degrees for approximately 20 min or until cheese is melted. Broil on low for 10 more minutes until cheese is golden brown.
