Salmon w/ Mango Slaw


Salmon recipe with mango


Fresh. Tasty. Yum.

Most of my recipes are chicken or beef...well chicken really, so to add in a salmon recipe must mean it's good! Good in my books anyways :) Taste is personal!

Light, fresh, and best of all, it takes 20 minutes tops to cook! A healthy and quick recipe for those nights where you don't have much time but don't want to eat from a box. 









Ingredients
  • 2 skin-on salmon fillets
  • 1 mango, peeled, pitted, and diced small
  • 1 bunch cilantro, finely chopped
  • ½ tsp red-pepper flakes
  • ¼ cup vegetable oil, + more for grilling
  • 3 tbs lime juice
  • 1 tbs brown sugar
  • Salt & pepper for seasoning

Directions:
  • Stir together mango, cilantro, red-pepper flakes, oil, lime juice, and brown sugar; season with salt and pepper.
  • Heat pan to medium-high. Season salmon with salt and pepper and lightly brush with oil. Grill, skin side up, until salmon begins to turn opaque, 4 to 6 minutes. Flip and cook opaque until throughout, 4 to 6 more minutes.
  • Transfer to a platter, spoon chimichurri over top, and serve.
