Warm meal for a cold day. Home cooked deliciousness!
I'm sure there are ways you could reduce the fat in this but it's sooooo tasty all fatty! I thickened up the sauce a bit more by mashing some butter with flour and adding to the sauce (I believe it's called a 'rue'?) and it gave it some extra buttery goodness, mmm.
I would add more than a pinch of cinnamon or nutmeg to this, definitely add to taste to kick it up a notch!
Ingredients:
- 4 boneless skinless chicken breasts
- 1 apple, cored and sliced
- ¼ cup butter (or coconut oil)
- ½ cup sour cream
- ½ cup apple juice
- 1 tsp thyme
- Pinch of cinnamon or nutmeg
Directions:
- Pan fry chicken in half of the butter until just no longer pink in the middle, turning once to ensure both sides are browned.
- Remove chicken from pan and keep in a warm place or cover with foil.
- Core and slice apples as desired.
- Add the remainder of the butter, apples, and thyme and cook apples until they are as crisp or tender s you like.
- Pour apples over chicken and keep warm.
- Deglaze the pan with wine, cider or juice scraping all the yummy bits off the bottom.
- Add the cream (sour cream, greek yogurt or full fat cream) and cook until slightly thickened.
- Return the chicken and apple mixture to the pan to warm. Serve over rice or scalloped potatoes.
