Looks like a regular cheeseburger no? Close, but a little less meaty and a little more mushroom-y. If you're tired of the same old meat hamburgers, then this tasty alternative will be right up your alley!
This was quite flavorful and easy to make, prep time is a cinch, the rest of the time is just waiting for everything to grill up. I subbed out marble cheese for mozza and it still tasted delish. Even my skeptical meatatarian husband said he was pleasantly surprised at how good this burger was :)
Portobello Burgers:
- 2 large Portobello mushrooms
- 3 tbs basil pesto
- 2 tbs olive oil
- Pinch of salt & pepper
- 2 slices mozzarella
- 2 small ciabatta buns
Directions:
- Cut stems off mushrooms to make level with the cap.
- Combine pesto w/ olive oil. Add a heaping tbs of the pesto mixture on the inside of each mushroom cap.
- Season with salt & pepper, and top each with a slice of cheese.
- Grill for 10 min until mushrooms are juice and tender, and cheese has melted.
- Open buns, add mushroom “burgers” and serve.
Maple Sweet Potato Fries:
- 2 large sweet potatoes
- 2 tbs olive oil
- ½ tsp chili powder
- 1 tsp salt
- 1 tbs maple syrup
Directions:
- Peel sweet potatoes and cut into skinny strips.
- Toss potatoes with olive oil, chili powder and salt.
- Grill potatoes on medium-high heat for about 15 min, turning as needed until tender and grill-marked. Brush lightly with maple syrup, and grill 3 min longer.
