Portobello and Pesto Cheeseburgers w/ Maple Sweet Potato Fries


Meatless recipe with mushroom

Looks like a regular cheeseburger no? Close, but a little less meaty and a little more mushroom-y. If you're tired of the same old meat hamburgers, then this tasty alternative will be right up your alley!

This was quite flavorful and easy to make, prep time is a cinch, the rest of the time is just waiting for everything to grill up. I subbed out marble cheese for mozza and it still tasted delish. Even my skeptical meatatarian husband said he was pleasantly surprised at how good this burger was :)








Portobello Burgers:
  • 2 large Portobello mushrooms
  • 3 tbs basil pesto
  • 2 tbs olive oil  
  • Pinch of salt & pepper 
  • 2 slices mozzarella
  • 2 small ciabatta buns

Directions:
  • Cut stems off mushrooms to make level with the cap.
  • Combine pesto w/ olive oil. Add a heaping tbs of the pesto mixture on the inside of each mushroom cap.
  • Season with salt & pepper, and top each with a slice of cheese.
  • Grill for 10 min until mushrooms are juice and tender, and cheese has melted.
  • Open buns, add mushroom “burgers” and serve.

Maple Sweet Potato Fries:
  • 2 large sweet potatoes
  • 2 tbs olive oil
  • ½ tsp chili powder
  • 1 tsp salt
  • 1 tbs maple syrup

Directions:
  • Peel sweet potatoes and cut into skinny strips.
  • Toss potatoes with olive oil, chili powder and salt.
  • Grill potatoes on medium-high heat for about 15 min, turning as needed until tender and grill-marked. Brush lightly with maple syrup, and grill 3 min longer.
