SO. SIMPLE. This recipe is one of my favorites, insanely tasty and it's actually stupid how easy it is to make this! Only downfall is that the cooking time is longer than I would like, so I wouldn't consider this a "quick and easy" dinner. Boo.
I suppose you could make this into a slow cooker meal by upping the saucy ingredients to cover the chicken...though I couldn't confirm if this would actually work.
You seriously have to try this recipe though, seriously yummy, warm, and an awesome home-cooked feel :)
Ingredients:
- ¼ cup Dijon mustard
- ¼ cup coarse mustard
- ¼ cup maple syrup
- 8 small carrots
- 10 small potatoes
- 2 shallots, peeled
Directions:
- Preheat oven to 400 degrees.
- Stir together mustards and maple syrup, season with salt and pepper. Brush mixture on chicken.
- Drizzle some oil into a 9x13” baking dish. Add chicken, carrots, potatoes, and shallots; drizzle with more oil.
- Bake until chicken is lightly golden and vegetables are tender. About 40 minutes.
