Maple Mustard Chicken Legs

SO. SIMPLE. This recipe is one of my favorites, insanely tasty and it's actually stupid how easy it is to make this! Only downfall is that the cooking time is longer than I would like, so I wouldn't consider this a "quick and easy" dinner. Boo.

I suppose you could make this into a slow cooker meal by upping the saucy ingredients to cover the chicken...though I couldn't confirm if this would actually work.

You seriously have to try this recipe though, seriously yummy, warm, and an awesome home-cooked feel :)

  • ¼ cup Dijon mustard 
  • ¼ cup coarse mustard
  • ¼ cup maple syrup
  • 8 small carrots
  • 10 small potatoes
  • 2 shallots, peeled

  • Preheat oven to 400 degrees.
  • Stir together mustards and maple syrup, season with salt and pepper. Brush mixture on chicken.
  • Drizzle some oil into a 9x13” baking dish. Add chicken, carrots, potatoes, and shallots; drizzle with more oil.
  • Bake until chicken is lightly golden and vegetables are tender. About 40 minutes.
