Chili Mac & Cheese

Mac & cheese, the most versatile meal in the world that almost everyone will love :) So simple and yet so tasty just by adding a few extra ingredients.

The recipe posted after the jump is to make the chili from scratch, while I do love it, it does take more effort than I would sometimes be willing to put in for dinner, so in a pinch if you want to make this quickly, just use a can of chili and add in extra celery and carrots, etc. :)









Ingredients:
  • 1 lb extra-lean ground beef
  • 1 small onion, chopped
  • 2 ribs celery, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tbs sriracha (optional) 
  • 2 cans chili
  • 3 tbs packed light brown sugar
  • 2 tbs Worcestershire sauce
  • 4 cups short pasta

Directions:
  • In a large saucepan, brown beef over medium-high heat, breaking up with a spoon. Remove and drain fat.
  • Add oil to pan, saute onion, celery, carrots, garlic, sriracha, and cumin until carrots begin to soften. Approximately 8 minutes.
  • Stir in canned chili, sugar, Worcestershire sauce and beef; reduce heat, cover and simmer until celery is tender, about 15 minutes.
  • Meanwhile, in a large saucepan of boiling salted water, cook pasta according to package directions; drain and stir into chili.
