Chicken Parmesan w/ Spaghetti Squash

Ok, so I buggered up a bit, this recipe is supposed to be with spaghetti squash but I apparently bought the wrong squash and ended up with butternut squash...so it's more of a potato like side but still delicious! 

Anyways, this is a super easy meal to make, the only time consuming part is just waiting for everything to bake! It literally takes like 10 minutes to get everything together.

Moist, delicious, and pretty nutritious I think :)

  • 1 spaghetti squash (about 2 lbs)
  • 6 tbs Caesar dressing, divided
  • 1 garlic clove minced
  • 4 boneless, skinless chicken breasts
  • 1 ½ cup tomato and herb pasta sauce, divided
  • ½ cup mozzarella shredded cheese

  • Preheat oven to 350 degrees.
  • Line a large baking sheet with foil. Cut your squash in half lengthwise, and seed. Place squash, cut-side up, on baking sheet. Brush with 3 tbs dressing and sprinkle with garlic and pepper. Bake 30 min.
  • Meanwhile, toss chicken in remaining dressing and marinate while squash is baking. Add chicken to baking sheet and bake 20 min. 
  • Spread 1/3 cup pasta sauce over chicken and sprinkle evenly with cheese. Bake until cheese is melted and squash is tender, about 10 min.
  • Drag a fork over squash to release the spaghetti-like strands, discard rinds. Serve chicken over squash. Warm remaining sauce and serve on the side.
