BBQ Pineapple Chicken

I've said it before I know, but I really need to learn how to take more glamorous food photos...anyone willing to give me tips and tricks? No? Shoot. Mediocre and unappetizing food pictures it is!

In case you can't tell, the picture is actually of chicken chunks and pineapple chunks in sauce on rice...not cat food or whatever else you are thinking :)

This is another simple, yet delicious recipe that makes its way into our menu planning time and time again.

I'd also like to add that minus the rice, these ingredients would probably taste very good on a pizza!

  • 2 chicken breasts (cubed)
  • 1 can of pineapple tidbits (chunks)
  • ½ cup reserved pineapple juice
  • 1 cup sweet & sour BBQ sauce
  • Hot sauce (optional)
  • Minute rice
  • Mint

  • Cube chicken breasts and pan fry with EVOO until cooked through halfway.
  • Start preparing your rice. Minute rice is great, and should be ready by the time you finish cooking the chicken.
  • Add in pineapple juice, pineapple chunks, and BBQ sauce (and hot sauce if desired) and stir well to combine and coat chicken. Let everything simmer until chicken is cooked through and sauce has thickened slightly.
  • Serve over bed of rice and garnish with mint leaves or flakes.
